Vitamin E supplementation is crucial to help our bodies fend off damage from PUFAs (Polyunsaturated Fatty Acids) which are nearly unavoidable in modern foods. Vitamin E scavenges free radicals generated by PUFAs, and counteracts a whole host of damaging effects.
What are PUFAs?
PUFAs are present in most foods. Even in some vegetables, at low amounts! So why try to avoid them? The primary issue with PUFAs is that they are highly unstable. All fats have a temperature with which they oxidize (i.e. become unstable, go rancid, become toxic). For PUFAs that temperature is very low. Small amounts of unprocessed PUFA in a well balanced diet are not an issue. The most damaging PUFAs are the processed liquid cooking oils below. This is because of high temperature processing, which is not natural. Rather than becoming afraid of PUFA-containing foods, we can be empowered to look at the big picture, and seek to eat more whole foods made in a kitchen, instead of fragmented, destabilized foods made in a lab!

- Sunflower oil
Yep, they're in nearly every typical processed food you can find, and many restaurants cook with these PUFAs. That said, enjoying these foods doesn't have to be completely off the table, as long as we provide our bodies with enough Vitamin E!
"But there's already a lot of vitamin E in our diets! How could anyone be deficient?"
Most foods that are naturally high in Vitamin E are heated to the point where the efficacy and integrity of the vitamin is destroyed. Subsequently, there is no more useful vitamin E to defend against PUFA-related damage.
Without Vitamin E to counteract these substances, excess PUFA consumption is linked to:
- Neurological degeneration
- Multiple kinds of cancer (including breast and prostate)
- Oxidative stress
- Anxiety
- Inflammation
- Mitochondria damage (causing fatigue and obesity)
- Immunosuppression
- Heart disease
"But wait, there's sunflower in this blend!" Yes! Sunflower is perfectly healthy to consume in a raw/stable state, and naturally high in Vitamin E. The sunflower oil used in modern foods has typically been heated and processed past its breaking point. The oil is extracted at high temperatures, and then cooked to more high temperatures for frying and baking. This process, like with many foods high in Vitamin E, destabilizes the fats and nutrients, so it actually becomes a PUFA in the process. This is an example of excessive heat and processing destroying the benefits of a whole food, and turning it into a detriment.
